Cucumber Mint Yogurt Salad

What do I choose to eat after the holidays? Something light and quick to make, with no cooking involved! And I’m sure you can agree with me. During Rosh Hashanah we ate so many delicious meals that I am scared to go on the scale at this point. So this salad is exactly what I need today! It is so refreshing that you can probably use it as a face mask!

Cucumber Mint Yogurt Salad

Serves: 4-6                 Time: 15 minutes


1 small garlic clove, peeled and crushed

2 burpless cucumbers-washed, peeled, halved lengthwise and cut into small pieces (you can use any type of cucumber)

1 cup plain, full-fat yogurt

Bunch of dried mint (you can also use fresh mint but make sure it is not wet when you add it to the yogurt)

Pinch of Kosher salt, to taste

Pinch of ground white pepper, to taste

In a big bowl add the crushed garlic, the cut cucumbers, and yogurt. Put the dried mint into the palms of your hands a little at a time and brush your hands together over the bowl, crushing the mint into small fine flakes. Add salt and pepper and serve immediately. Best eaten cold.

**Tips:

-You can enjoy this dish as a side dish, mezze, snack, or you can eat is as a meal with some toasted pita or naan bread.
