The fall is coming!! My favorite time of year!! The fresh beautiful cranberries, the apple picking, the pumpkin pies. I am feeling nostalgic today and had some ‘fresh’ cranberries that I froze in the freezer a while back. So I decided to make this light and tart dessert perfection. You won’t believe how good it is until you make it and take one bite!!
This dessert is tangy with a little bit of sweetness. I added some orange flavor to compliment the cranberry tartness. The crumble top is a crispy and flaky sweet delight.
Cranberry Orange Cobbler
Topping:
1 1/4 cup all-purpose flour1/2 cup turbinado or brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons butter, chilled
1 egg
1/2 cup of heavy cream or buttermilk
1 teaspoon vanilla extract
Vanilla ice-cream (optional but highly recommended)
Filling:
3 cups cranberries
1 cup regular sugar
1/4 cup orange juice
1 teaspoon grated orange zest
Preheat oven to 350°F. Take a cast iron skillet or a 9″ pie dish and put cranberries in it. Mix in sugar, orange zest, and orange juice.
Place the cranberry mixture in oven to cook while you are making the crumble topping.
In a big bowl, mix together flour, sugar, baking powder, cinnamon, and salt. Then cut the chilled butter in cubes and place into the dry ingredients. With a pastry cutter or two forks, cut the butter into the dry ingredients until there are little nibbles of butter coated with the flour mixture. You can also use your hands if easier. Add egg, heavy cream or buttermilk, and vanilla extract. Mix all ingredients together with a large spoon and it will become one clumpy, big, sticky ball.
Take the cranberry filling out of the oven and carefully (not to burn yourself) place big, scattered clumps of the crumble topping over the cranberries.
Place in the 350°F oven for 40-50 minutes until the crust is brown and scrumptious. Take out and let cool on baking rack.
Serve warm with a little powdered sugar and a scoop of vanilla ice cream–OMG delish!!!!
