Pizza Pizza Pizza! 3 Cheese Blistered Tomato and Mushroom Pizza

What is better than pizza? Homemade pizza!! Especially because you can basically put anything on it and it will taste yummy!! Veggies in the fridge about to go bad? Use them on a pizza! Leftover brisket or chicken? Use them on a non-dairy pizza! It’s such a fun activity to do with your kids, friends, or family. Everyone can be creative with the toppings. We try to have a pizza night at home every week where we make homemade pizza and we love it!

I had a bunch of mushrooms and a huge block of mozzarella in my fridge. So I decided to make a white pizza with blistered plum tomatoes mixed with garlic, mushrooms, parmesan cheese, blue cheese, and mozzarella cheese–YUM!

3 Cheese Blistered Tomato and Mushroom Pizza


2 tablespoons of olive oil

3/4 cup of grated parmesan cheese

1 cup of sliced mozzarella cheese

1/4 cup blue cheese

5-6 large white mushrooms, sliced

Plum tomatoes

2-3 cloves of garlic, crushed

Sea Salt, to taste

Chili Pepper Flakes, to taste

This is completely optional but i like to cook my tomatoes and mushrooms before I place them on the dough. I just find the pizza to be less watery since tomatoes and mushrooms let out so much juice. You can also do this step ahead of time–like the day before you are planning on making the pizza. If you choose not to do this step, then the pizza will still turn out great so don’t worry!! This is just my preference.

If you are cooking tomatoes and mushrooms beforehand:

Tomatoes-crush two cloves of garlic and place in a bowl with one tablespoon of olive oil and a handful of plum tomatoes. Mix and place on baking sheet. Put into the oven on 350 degrees for about 15 minute–until the tomatoes are blistered open and the garlic is browning.

Mushrooms-place one tablespoon of oil into a non-stick skillet, place mushrooms and cook them down until they shrink a little and are browned.

Preheat oven to the highest baking temperature–my oven goes up to 550°F.

Once the dough is laid out on the baking sheet or pizza tray, spread all of the toppings listed above over the crust and spread a little olive oil over it all. I listed the portions I put on, but you can put as much or as little as you would like.

Cook for 10-15 minutes. 10 minutes for soft crust and 15 minutes for more well done crust. Take out and sprinkle some crushed chili pepper flakes if you want to add some spice and a pinch of sea salt.

If you are making my Homemade Pizza Dough, make sure not to put an overload of heavy topping because it will weight down the dough once its cut into slices.
