Dill and Red Pepper Egg Salad

I love quick and easy recipes that can please a crowd. The hardest thing about this recipe is trying to peel the hard boiled eggs perfectly. This can be eaten plain, in a sandwich, as an appetizer, or even as a salad at a party!

Dill and Red Pepper Egg Salad (Enough to make two big sandwiches or good for an appetizer)


6 hard boiled eggs, peeled

Bunch of dill (About 2 tablespoons chopped finely)

2 tablespoons of mayonnaise

1 quarter of a red pepper, chopped plus more for garnish if you prefer

Salt and pepper, to taste

Boil the eggs and let them cool. Peel them and place into a big bowl. Using a potato masher or fork, mash the eggs until they are all crumbly. Chop the dill finely (taking off the stems) and cube the red pepper. Add the dill, mayonnaise, red pepper, salt and pepper. You can also add some white onion finely chopped to add more flavor.
